- 1 cup unsalted butter (for browning)
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup shelled pistachios (roughly chopped)
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- In a medium saucepan, melt the butter over medium heat, stirring frequently until golden brown and nutty, about 5-7 minutes.
- Remove from heat and let cool slightly. In a large bowl, combine brown butter with both sugars and whisk until smooth.
- Add eggs and vanilla, mixing until fully incorporated.
- In another bowl, whisk flour, baking soda, and salt. Gradually mix dry ingredients into wet mixture until just combined.
- Fold in chopped pistachios and white chocolate chips, if using. Spread batter evenly in prepared pan.
- Bake for 20-25 minutes, until edges are golden and a toothpick comes out clean.
- Let cool before slicing into bars.
