- 1 cup unsalted butter ((2 sticks))
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups unsalted pistachios (roughly chopped)
- Optional sea salt (for sprinkling on top)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium saucepan, melt the butter over medium heat. Cook it until it turns golden brown and develops a nutty aroma, about 5-7 minutes. Stir frequently to prevent burning.
- Remove the saucepan from heat and let the butter cool for a few minutes. Then, whisk in the brown sugar and granulated sugar until fully combined.
- Add honey and vanilla extract to your mixture, stirring until smooth. Incorporate the eggs one at a time, mixing until well blended.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped pistachios, ensuring they’re evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan, spreading it evenly. If desired, sprinkle a bit of sea salt on top for that sweet and salty contrast.
- Bake for 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
- Let the bars cool in the pan for about 10 minutes before lifting them out using the parchment paper. Allow to cool completely on a wire rack before cutting into squares.
