  • 1 cup unsalted butter ((2 sticks))
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted pistachios (roughly chopped)
  • Optional sea salt (for sprinkling on top)

Instructions

  • Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a medium saucepan, melt the butter over medium heat. Cook it until it turns golden brown and develops a nutty aroma, about 5-7 minutes. Stir frequently to prevent burning.
  • Remove the saucepan from heat and let the butter cool for a few minutes. Then, whisk in the brown sugar and granulated sugar until fully combined.
  • Add honey and vanilla extract to your mixture, stirring until smooth. Incorporate the eggs one at a time, mixing until well blended.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chopped pistachios, ensuring they’re evenly distributed throughout the batter.
  • Pour the batter into the prepared baking pan, spreading it evenly. If desired, sprinkle a bit of sea salt on top for that sweet and salty contrast.
  • Bake for 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
  • Let the bars cool in the pan for about 10 minutes before lifting them out using the parchment paper. Allow to cool completely on a wire rack before cutting into squares.
