  • 1 cup unsalted butter (for browning)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons espresso powder (or finely ground coffee)
  • 1 cup chocolate chips (optional)

Instructions

  • Start by browning the butter. In a medium saucepan over medium heat, melt the butter until it becomes golden brown and has a nutty aroma. This usually takes about 5-7 minutes.
  • Once browned, remove it from heat and let it cool slightly.
  • In a large mixing bowl, combine the granulated sugar, brown sugar, and brown butter. Mix until well combined.
  • Add in the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
  • In another bowl, whisk together the flour, cocoa powder, baking powder, salt, and espresso powder.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • If using, fold in the chocolate chips.
  • Pour the batter into a greased 9×13 inch baking pan and smooth the top.
  • Bake at 350°F (175°C) for 25-30 minutes. A toothpick should come out with a few moist crumbs.
