Brown Butter Cinnamon Sugar Madeleines

  • 1/2 cup unsalted butter (plus more for greasing)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 cup powdered sugar (for dusting)

Instructions

  • Preheat your oven to 375°F (190°C). Grease your madeleine pan with butter to ensure easy removal.
  • In a small saucepan, melt the butter over medium heat. Continue cooking until it turns a golden brown color and develops a nutty aroma. Remove from heat and let it cool slightly.
  • In a mixing bowl, whisk together the eggs and granulated sugar until the mixture is light and fluffy.
  • Add in the vanilla extract and the cooled brown butter, mixing until well combined.
  • In another bowl, sift together the flour, baking powder, salt, and cinnamon. Gradually fold this dry mixture into the wet ingredients, being careful not to overmix.
  • Fill each madeleine mold about 3/4 full with batter. Bake for 10-12 minutes, or until the edges are golden and the centers spring back when touched.
  • Let the madeleines cool in the pan for a few minutes before transferring them to a wire rack.
  • While they cool, mix together the remaining sugar and cinnamon in a small bowl. Roll the warm madeleines in the cinnamon sugar to coat evenly.
