  • 4 large flour tortillas
  • 4 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
  • 1/2 cup cooked sausage or bacon (crumbles)
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped onions
  • Salt and pepper (to taste)
  • 1 tablespoon butter
  • Optional toppings (salsa, sour cream, avocado)

Instructions

  • In a medium bowl, whisk the eggs with salt and pepper. Set aside.
  • Heat a non-stick skillet over medium heat and add butter.
  • Once melted, pour in the eggs, stirring gently until scrambled. Remove from heat.
  • Lay a tortilla flat in the skillet over medium heat.
  • Sprinkle half the cheese on one side of the tortilla.
  • Top with scrambled eggs, sausage, bell peppers, and onions.
  • Sprinkle the remaining cheese on top.
  • Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
  • Repeat with the remaining tortillas and filling ingredients.
  • Serve warm with your favorite toppings.
