- 4 large flour tortillas
- 4 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
- 1/2 cup cooked sausage or bacon (crumbles)
- 1/4 cup diced bell peppers
- 1/4 cup chopped onions
- Salt and pepper (to taste)
- 1 tablespoon butter
- Optional toppings (salsa, sour cream, avocado)
Instructions
- In a medium bowl, whisk the eggs with salt and pepper. Set aside.
- Heat a non-stick skillet over medium heat and add butter.
- Once melted, pour in the eggs, stirring gently until scrambled. Remove from heat.
- Lay a tortilla flat in the skillet over medium heat.
- Sprinkle half the cheese on one side of the tortilla.
- Top with scrambled eggs, sausage, bell peppers, and onions.
- Sprinkle the remaining cheese on top.
- Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
- Repeat with the remaining tortillas and filling ingredients.
- Serve warm with your favorite toppings.
