  • 8 large eggs eggs
  • 1 cup diced bell peppers (mix of colors for fun!)
  • 1 cup diced onions
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • to taste Salt and pepper
  • 4 large tortillas (flour or whole wheat)
  • to taste Chopped cilantro (for garnish (optional))

Instructions

  • Start by preheating your oven to 350°F (175°C).
  • In a large skillet, sauté the diced bell peppers and onions on medium heat until they're soft, about 5-7 minutes.
  • In a bowl, whisk the eggs with salt and pepper. Pour them into the skillet with the veggies. Cook until eggs are just set, stirring occasionally.
  • Add the cooked sausage or bacon and black beans to the egg mixture. Stir to combine, cooking for another 2-3 minutes.
  • Take your tortillas and lay them flat. Spoon the egg mixture into the center of each tortilla, topping with cheese and salsa.
  • Fold in the sides and roll up tightly to form a burrito. Place each burrito seam-side down in a meal prep container.
  • Once all burritos are assembled, sprinkle chopped cilantro on top, if desired.
  • Store in the fridge for up to 5 days. When ready to eat, simply heat in the microwave for 1-2 minutes, or until warmed through.
