- 8 ounces bow tie pasta
- 2 tablespoons olive oil
- 3 cups fresh spinach, washed and chopped
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
Instructions
- Start by boiling a large pot of salted water for the pasta.
- Once boiling, add the bow tie pasta and cook according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the sliced mushrooms and sauté for 3-4 minutes until they begin to soften.
- Add the minced garlic and red pepper flakes to the skillet. Cook for another minute.
- Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the rest.
- Add the cooked pasta directly to the skillet with the mushrooms.
- Add the chopped spinach to the skillet and toss everything together.
- Stir in the Parmesan cheese and lemon juice. Season with salt and pepper to taste.
- Serve warm, garnished with extra Parmesan cheese.
