  • 8 ounces bow tie pasta
  • 2 tablespoons olive oil
  • 3 cups fresh spinach, washed and chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice

Instructions

  • Start by boiling a large pot of salted water for the pasta.
  • Once boiling, add the bow tie pasta and cook according to package instructions until al dente.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  • Add the sliced mushrooms and sauté for 3-4 minutes until they begin to soften.
  • Add the minced garlic and red pepper flakes to the skillet. Cook for another minute.
  • Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the rest.
  • Add the cooked pasta directly to the skillet with the mushrooms.
  • Add the chopped spinach to the skillet and toss everything together.
  • Stir in the Parmesan cheese and lemon juice. Season with salt and pepper to taste.
  • Serve warm, garnished with extra Parmesan cheese.
