Delicious Bourbon BBQ Meatloaf Cupcakes topped with creamy mashed potato frosting.

Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup finely chopped onion
  • 1/4 cup bourbon BBQ sauce
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large potatoes (for the mashed potato frosting)
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper to taste (for mashed potatoes)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix ground beef, breadcrumbs, onion, bourbon BBQ sauce, egg, Worcestershire sauce, garlic powder, salt, and black pepper in a bowl.
  3. Grease a cupcake pan or use liners.
  4. Scoop the meat mixture into the cupcake molds, filling them 3/4 full.
  5. Bake for 20-25 minutes, checking with a toothpick.
  6. Boil peeled and chopped potatoes in salted water until fork-tender, about 15-20 minutes.
  7. Drain potatoes, then mash with milk, butter, and seasoning until smooth.
  8. Once the cupcakes cool, frost them with the mashed potatoes.
  9. Serve warm and enjoy!

Notes

  • Feel free to adjust seasoning based on preference.
  • Using a piping bag can create a decorative frosting on the cupcakes.
