- 4 fillets cod (about 6 ounces each)
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1/4 cup grated Parmesan cheese
- 1/4 cup melted butter
- 2 tablespoons chopped fresh parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 lemon (for zest and juice)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine breadcrumbs, Parmesan cheese, melted butter, parsley, garlic powder, paprika, salt, and pepper. Mix until the breadcrumbs are well coated.
- In a baking dish, arrange the cod fillets in a single layer. Squeeze fresh lemon juice over the fish and sprinkle with lemon zest.
- Top each cod fillet generously with the breadcrumb mixture, pressing down slightly to ensure it sticks.
- Bake in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork and the breadcrumbs are golden brown.
- Remove from the oven and let it rest for a few minutes before serving.
