- 4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 packet instant yeast
- 1 cup whole milk (warmed)
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup fresh blueberries (or frozen, thawed and drained)
- 1 lemon zest
- 1 lemon juice
- 1 cup powdered sugar (for glaze)
- 2 tablespoons lemon juice (for glaze)
Instructions
- In a large bowl, mix the warm milk, melted butter, and sugar. Let it cool slightly before adding the yeast.
- Add the eggs, vanilla extract, lemon zest, and lemon juice. Stir until well combined.
- Gradually add the flour and salt, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.
- Place the dough in a greased bowl, cover with a cloth, and let it rise for about an hour, or until doubled in size.
- Once risen, punch down the dough and roll it out into a rectangle about 1/4 inch thick.
- Spread the blueberries evenly across the dough and roll it tightly from the long side.
- Cut the rolled dough into 12 equal pieces and place them in a greased baking dish. Cover and let them rise for another 30 minutes.
- Preheat your oven to 350°F (175°C) and bake the rolls for 25-30 minutes, or until golden brown.
- While the rolls are baking, mix powdered sugar and lemon juice to create the glaze.
- Once the rolls are done, drizzle the glaze over them while they’re still warm. Enjoy!
