- 4 fillets salmon (about 6 oz each)
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 medium ripe mango, diced
- 1/2 cup red onion, finely chopped
- 1 medium jalapeño, minced (optional)
- 1/4 cup fresh cilantro, chopped
- 1 lime Juice of
Instructions
- In a bowl, mix the diced mango, red onion, jalapeño, cilantro, and lime juice. Set aside to let the flavors meld.
- In a small bowl, combine smoked paprika, cayenne pepper, garlic powder, onion powder, oregano, and salt.
- Rub the spice mixture evenly over both sides of each salmon fillet.
- In a large skillet, heat olive oil over medium-high heat until shimmering.
- Carefully add the fillets to the skillet. Cook for about 4-5 minutes per side or until the salmon is cooked through and has a nice crust.
- Plate the salmon and generously top with mango salsa. Enjoy!
