  • 4 fillets salmon (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 medium ripe mango, diced
  • 1/2 cup red onion, finely chopped
  • 1 medium jalapeño, minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 lime Juice of

Instructions

  • In a bowl, mix the diced mango, red onion, jalapeño, cilantro, and lime juice. Set aside to let the flavors meld.
  • In a small bowl, combine smoked paprika, cayenne pepper, garlic powder, onion powder, oregano, and salt.
  • Rub the spice mixture evenly over both sides of each salmon fillet.
  • In a large skillet, heat olive oil over medium-high heat until shimmering.
  • Carefully add the fillets to the skillet. Cook for about 4-5 minutes per side or until the salmon is cooked through and has a nice crust.
  • Plate the salmon and generously top with mango salsa. Enjoy!
