Instructions
- Start by rinsing and draining the black beans.
- In a large mixing bowl, combine the black beans, diced mango, red bell pepper, red onion, and corn.
- Add the chopped cilantro and optional jalapeño for a kick.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour this dressing over the salad ingredients.
- Toss everything gently until well combined.
- Let the salad sit for about 10-15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
