A delicious and easy blueberry French toast casserole perfect for breakfast or brunch.

Ingredients

  • 1 loaf of French bread (about 12-14 ounces)
  • 2 cups fresh blueberries (or frozen if you prefer)
  • 6 large eggs
  • 2 cups milk (whole or your choice)
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing the baking dish)

Instructions

  1. Cut French bread into 1-inch cubes.
  2. Whisk together eggs, milk, sugar, vanilla, cinnamon, and salt in a bowl.
  3. Layer half of the bread cubes and blueberries in a greased baking dish, then pour half of the custard mixture over it. Repeat with the remaining ingredients.
  4. Cover and refrigerate for at least 1 hour or overnight.
  5. Preheat oven to 350°F (175°C). Let casserole sit at room temperature for 15 minutes, then bake uncovered for 45-50 minutes until golden brown.
  6. Cool slightly, then serve with powdered sugar or maple syrup.

Notes

  • Feel free to substitute blueberries with strawberries or raspberries.
  • Adding nutmeg can enhance the flavor.
