Instructions
- In a mixing bowl, combine the chia seeds, almond milk, honey (if using), and vanilla extract.
- Whisk the mixture well to avoid clumping. The chia seeds will start to absorb the liquid and thicken.
- Cover the bowl and let it sit in the fridge for at least 2 hours, or overnight for the best results.
- After the chia pudding has set, give it a good stir. You can add more almond milk if you prefer a thinner consistency.
- Layer the pudding in a glass or bowl with mixed berries for a beautiful presentation.
- Top with almond slices and mint leaves if desired. Serve immediately or store in the fridge for later.
