  • 4 medium beets (washed and trimmed)
  • 4 oz goat cheese (crumbled)
  • 2 cups mixed greens (like arugula and spinach)
  • 1/2 cup walnuts (chopped)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash the beets thoroughly and wrap each in aluminum foil.
  • Roast the beets in the oven for about 45-60 minutes, or until a fork easily pierces through them.
  • Once roasted, let the beets cool slightly before peeling off the skin.
  • Slice the beets into wedges or cubes.
  • In a small bowl, whisk together the balsamic vinegar and olive oil. Season with salt and pepper.
  • In a large bowl, combine the mixed greens, roasted beets, walnuts, and goat cheese.
  • Drizzle the balsamic dressing over the salad and gently toss to combine.
  • Serve immediately, or chill for about 30 minutes to let the flavors meld.
