- 4 medium beets (washed and trimmed)
- 4 oz goat cheese (crumbled)
- 2 cups mixed greens (like arugula and spinach)
- 1/2 cup walnuts (chopped)
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the beets thoroughly and wrap each in aluminum foil.
- Roast the beets in the oven for about 45-60 minutes, or until a fork easily pierces through them.
- Once roasted, let the beets cool slightly before peeling off the skin.
- Slice the beets into wedges or cubes.
- In a small bowl, whisk together the balsamic vinegar and olive oil. Season with salt and pepper.
- In a large bowl, combine the mixed greens, roasted beets, walnuts, and goat cheese.
- Drizzle the balsamic dressing over the salad and gently toss to combine.
- Serve immediately, or chill for about 30 minutes to let the flavors meld.
