- 1 pound ground beef
- 1 cup uncooked rice (white or brown)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup shredded cheese
- 1 medium onion, diced
- 1 medium bell pepper, diced
- to taste Salt and pepper
- for garnish Fresh cilantro (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
- Add the diced onion and bell pepper, cooking until softened, around 3-4 minutes.
- Stir in the taco seasoning, mixing well with the meat and veggies.
- Add the uncooked rice, black beans, corn, and beef broth. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for 15-20 minutes or until the rice is tender.
- Once cooked, remove from heat and sprinkle with cheese. Cover again until cheese melts, about 3 minutes.
- Garnish with fresh cilantro if desired. Serve hot and enjoy!
