  • 1 pound ground beef
  • 1 cup uncooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup shredded cheese
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • to taste Salt and pepper
  • for garnish Fresh cilantro (optional)

Instructions

  • In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
  • Add the diced onion and bell pepper, cooking until softened, around 3-4 minutes.
  • Stir in the taco seasoning, mixing well with the meat and veggies.
  • Add the uncooked rice, black beans, corn, and beef broth. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for 15-20 minutes or until the rice is tender.
  • Once cooked, remove from heat and sprinkle with cheese. Cover again until cheese melts, about 3 minutes.
  • Garnish with fresh cilantro if desired. Serve hot and enjoy!
