  • 1 lb ground beef (or lamb, if preferred)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh mint (chopped or 1 tsp dried mint)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper (to taste)
  • 1/2 tsp baking soda
  • 1 cup plain yogurt
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (for the yogurt dip)

Instructions

  • In a large bowl, combine the ground beef, chopped onion, minced garlic, parsley, mint, cumin, coriander, paprika, salt, pepper, and baking soda. Mix it thoroughly until well combined.
  • Shape the mixture into oval or cylindrical patties (about 1-2 inches long). You can also use skewers if grilling.
  • Preheat your grill or oven to 400°F (200°C). If using an oven, line a baking sheet with parchment paper.
  • Cook the kofta on the grill or in the oven for about 15-20 minutes, turning halfway through, until browned and cooked through.
  • While the kofta is cooking, prepare the yogurt dip by mixing yogurt, lemon juice, garlic powder, and salt in a small bowl.
  • Once the kofta are cooked, let them rest for a few minutes. Serve hot with the yogurt dip on the side.
