A comforting and cheesy beef enchilada bake that’s easy to prepare and perfect for family dinners.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) enchilada sauce
  • 8 small corn tortillas
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • for garnish Fresh cilantro (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, brown the ground beef with diced onion and garlic until fully cooked. Drain any excess fat.
  • Add black beans, enchilada sauce, chili powder, cumin, salt, and pepper. Stir until combined and heated through.
  • In a greased 9×13 inch baking dish, layer 4 tortillas on the bottom. Spread half of the beef mixture on top, followed by a sprinkle of cheese.
  • Repeat the layering process with the remaining tortillas, beef mixture, and top with the rest of the cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before garnishing with fresh cilantro, if desired. Serve hot.
