  • 1 pound ground beef (or turkey for a leaner option)
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 avocado sliced
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 tablespoon taco seasoning
  • to taste Salt and pepper
  • 1 bunch fresh cilantro (for garnish (optional))

Instructions

  • In a skillet over medium heat, brown the ground beef until fully cooked, about 6-8 minutes. Drain any excess grease.
  • Add the taco seasoning to the beef, along with a splash of water. Stir and cook for an additional 2 minutes.
  • While the beef is cooking, prepare your rice according to package instructions. If using cauliflower rice, sauté it in a separate pan until it's tender.
  • Once the beef and rice are ready, it's time to assemble your bowls. Start with a base of rice, then layer on the beef, black beans, corn, and diced tomatoes.
  • Top each bowl with shredded cheese, avocado slices, sour cream, and fresh cilantro, if desired.
