  • 1 head romaine lettuce (chopped)
  • 1 can black beans (drained and rinsed (15 oz))
  • 1 cup corn (fresh or frozen)
  • 1 pound ground beef or turkey
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded cheddar cheese
  • 1 avocado (diced)
  • 1/2 cup BBQ sauce
  • 1/2 cup ranch dressing
  • 1 cup tortilla chips (crushed)
  • 1 Fresh cilantro (for garnish (optional))

Instructions

  • In a skillet over medium heat, cook the ground beef or turkey until browned and fully cooked, about 6-8 minutes. Drain any excess fat.
  • Stir in the BBQ sauce, mixing well to coat the meat. Remove from heat and let it cool slightly.
  • In a large bowl, combine the chopped romaine lettuce, black beans, corn, tomatoes, and avocado.
  • Add the BBQ meat mixture to the salad and toss to combine.
  • Drizzle with ranch dressing and mix until everything is well coated.
  • Top with crushed tortilla chips and shredded cheese. Garnish with cilantro if desired.
