- 1 head romaine lettuce (chopped)
- 1 can black beans (drained and rinsed (15 oz))
- 1 cup corn (fresh or frozen)
- 1 pound ground beef or turkey
- 1 cup cherry tomatoes (halved)
- 1 cup shredded cheddar cheese
- 1 avocado (diced)
- 1/2 cup BBQ sauce
- 1/2 cup ranch dressing
- 1 cup tortilla chips (crushed)
- 1 Fresh cilantro (for garnish (optional))
Instructions
- In a skillet over medium heat, cook the ground beef or turkey until browned and fully cooked, about 6-8 minutes. Drain any excess fat.
- Stir in the BBQ sauce, mixing well to coat the meat. Remove from heat and let it cool slightly.
- In a large bowl, combine the chopped romaine lettuce, black beans, corn, tomatoes, and avocado.
- Add the BBQ meat mixture to the salad and toss to combine.
- Drizzle with ranch dressing and mix until everything is well coated.
- Top with crushed tortilla chips and shredded cheese. Garnish with cilantro if desired.
