- 2 pieces boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks
- 1 cup bell peppers, chopped
- 1/2 cup red onion, chopped
- 1/2 cup BBQ sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Aluminum foil for wrapping
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, combine the chicken breasts, pineapple chunks, bell peppers, red onion, BBQ sauce, olive oil, salt, and pepper.
- Cut four large pieces of aluminum foil, approximately 12×18 inches each.
- Place an equal portion of the chicken mixture onto the center of each piece of foil.
- Fold the sides of the foil over the mixture, sealing it tightly to create a packet.
- Place the foil packets on the grill and cook for 20-25 minutes.
- Carefully remove the packets from the grill and let them sit for a few minutes before opening.
