- 2 cups shredded beef (cooked)
- 1 cup BBQ sauce
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 8 large flour tortillas
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium heat. Add onions and bell peppers, sautéing until soft.
- Add shredded beef and BBQ sauce to the skillet, stirring until well combined. Cook for 5 minutes.
- Heat another skillet over medium heat. Place a tortilla in the skillet, sprinkle cheese on one half.
- Spoon beef mixture over the cheese, then fold the tortilla in half. Cook until golden brown, flipping once.
- Repeat with remaining tortillas and filling.
- Cut each quesadilla into wedges and serve hot.
