  • 1 cup BBQ sauce
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 8 large flour tortillas
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 2 tablespoons olive oil

Instructions

  • In a large skillet, heat olive oil over medium heat. Add onions and bell peppers, sautéing until soft.
  • Add shredded beef and BBQ sauce to the skillet, stirring until well combined. Cook for 5 minutes.
  • Heat another skillet over medium heat. Place a tortilla in the skillet, sprinkle cheese on one half.
  • Spoon beef mixture over the cheese, then fold the tortilla in half. Cook until golden brown, flipping once.
  • Repeat with remaining tortillas and filling.
  • Cut each quesadilla into wedges and serve hot.
