- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3 ripe bananas, mashed
- 1 cup grated zucchini
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a mixing bowl, combine the flour, baking soda, salt, and cinnamon. Stir together until well mixed.
- In a separate bowl, whisk together the granulated sugar, brown sugar, mashed bananas, grated zucchini, eggs, oil, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Don’t overmix; it’s okay if there are a few lumps.
- If desired, fold in walnuts or chocolate chips at this stage.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
- Once done, remove from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
