  • 3 ripe bananas (mashed)
  • 1/2 cup unsalted butter (melted)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a small saucepan, melt the butter over low heat. Stir in brown sugar until it’s dissolved and smooth.
  • Evenly distribute the caramel mixture into the bottom of each muffin cup.
  • In a large bowl, combine the mashed bananas, granulated sugar, eggs, and vanilla. Mix until well combined.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry ingredients to the banana mixture, stirring until just combined. Don’t overmix!
  • Gently fold in nuts or chocolate chips if using.
  • Pour the batter over the caramel mixture in the muffin tin, filling each cup about 2/3 full.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes, then invert onto a cooling rack. Enjoy warm!
