  • 2 medium zucchinis, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add the chopped onion and minced garlic to the skillet. Cook until the onion becomes translucent, about 3-4 minutes.
  • Stir in the sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes, just until the zucchini starts to soften.
  • Transfer the mixture to a greased baking dish. Spread it evenly.
  • Top with shredded cheese and breadcrumbs if using.
  • Bake in the oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
