- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion becomes translucent, about 3-4 minutes.
- Stir in the sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes, just until the zucchini starts to soften.
- Transfer the mixture to a greased baking dish. Spread it evenly.
- Top with shredded cheese and breadcrumbs if using.
- Bake in the oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for about 5 minutes before serving. Enjoy!
