  • 4 large chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • Olive oil for drizzling

Instructions

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  • In a bowl, mix together ricotta cheese, chopped spinach, mozzarella cheese, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until well combined.
  • Take each chicken breast and carefully slice it open to create a pocket.
  • Spoon the cheese mixture into each pocket, ensuring you don’t overstuff them.
  • Place the stuffed chicken breasts in the greased baking dish. Pour marinara sauce over the top and drizzle with a little olive oil.
  • Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the chicken is cooked through.
  • Let them rest for a few minutes before slicing.
