- 4 large chicken breasts
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a bowl, mix together ricotta cheese, chopped spinach, mozzarella cheese, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until well combined.
- Take each chicken breast and carefully slice it open to create a pocket.
- Spoon the cheese mixture into each pocket, ensuring you don’t overstuff them.
- Place the stuffed chicken breasts in the greased baking dish. Pour marinara sauce over the top and drizzle with a little olive oil.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the chicken is cooked through.
- Let them rest for a few minutes before slicing.
