- 2 pounds baby potatoes (halved)
- 1 block (8 ounces) feta cheese
- 1/4 cup olive oil
- 2 teaspoons dried oregano
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
- Optional Cherry tomatoes (halved)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the halved baby potatoes, olive oil, oregano, salt, and pepper. Toss until the potatoes are well coated.
- Spread the potatoes on a baking sheet in a single layer. Make some space in the center and place the block of feta cheese there.
- If using, scatter the halved cherry tomatoes around the potatoes and feta.
- Bake in the preheated oven for about 30-35 minutes, or until the potatoes are golden and tender.
- Remove from the oven and let it cool for a few minutes. Then, use a fork to mash the feta and mix it with the potatoes.
- Garnish with fresh parsley before serving.
