A delicious and easy dish featuring roasted baby potatoes topped with creamy feta cheese, herbs, and spices.

  • 2 pounds baby potatoes (halved)
  • 1 block (8 ounces) feta cheese
  • 1/4 cup olive oil
  • 2 teaspoons dried oregano
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)
  • Optional Cherry tomatoes (halved)

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the halved baby potatoes, olive oil, oregano, salt, and pepper. Toss until the potatoes are well coated.
  • Spread the potatoes on a baking sheet in a single layer. Make some space in the center and place the block of feta cheese there.
  • If using, scatter the halved cherry tomatoes around the potatoes and feta.
  • Bake in the preheated oven for about 30-35 minutes, or until the potatoes are golden and tender.
  • Remove from the oven and let it cool for a few minutes. Then, use a fork to mash the feta and mix it with the potatoes.
  • Garnish with fresh parsley before serving.
