- 4 fillets cod (about 6 ounces each)
- to taste Salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon fresh dill (chopped (or 1 teaspoon dried dill))
- 2 cloves garlic (minced)
- 1 tablespoon Dijon mustard
- 1 tablespoon honey (or maple syrup for a vegan option)
- 1 tablespoon fresh parsley (chopped (for garnish))
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse and pat dry the cod fillets. Season both sides with salt and pepper.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, dill, garlic, Dijon mustard, and honey.
- Place the seasoned cod fillets in a baking dish. Pour the lemon-dill sauce over the top.
- Bake in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork.
- Once out of the oven, sprinkle with fresh parsley for an added touch.
