  • 4 fillets cod (about 6 ounces each)

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh dill (chopped (or 1 teaspoon dried dill))
  • 2 cloves garlic (minced)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 tablespoon fresh parsley (chopped (for garnish))

Instructions

  • Preheat your oven to 400°F (200°C).
  • Rinse and pat dry the cod fillets. Season both sides with salt and pepper.
  • In a small bowl, whisk together the olive oil, lemon juice, lemon zest, dill, garlic, Dijon mustard, and honey.
  • Place the seasoned cod fillets in a baking dish. Pour the lemon-dill sauce over the top.
  • Bake in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork.
  • Once out of the oven, sprinkle with fresh parsley for an added touch.
