Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and sugar.
  3. In another bowl, mix the wet ingredients: applesauce, milk, eggs, and vanilla extract.
  4. Combine the wet and dry mixtures, stirring gently until just combined.
  5. Fold in the diced apples.
  6. Scoop the batter onto a greased baking sheet, shaping it into round fritters, spaced about 2 inches apart.
  7. Bake for about 20 minutes until golden brown and a toothpick comes out clean.
