Ingredients

  • 1 cup cooked bacon, chopped
  • 1 cup red bell pepper, diced
  • 1/2 cup shredded cheese (cheddar or your favorite)
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease the muffin tin or line it with muffin liners.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper.
  4. Stir in the bacon, red bell pepper, and cheese.
  5. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes until set and lightly golden.
