Instructions
- Preheat the oven to 350°F (175°C).
- Grease the muffin tin or line it with muffin liners.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the bacon, red bell pepper, and cheese.
- Pour the mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes until set and lightly golden.
- Cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or store for later.
