- 1 ripe avocado
- 2 egg whites
- 2 slices whole-grain bread
- Salt and pepper to taste
- Optional toppings: red pepper flakes, cherry tomatoes, radishes, or microgreens
Instructions
- Start by toasting the bread to your desired crispiness.
- While the bread is toasting, crack the eggs and separate the egg whites into a bowl.
- In a non-stick skillet over medium heat, cook the egg whites until set.
- Meanwhile, scoop out the avocado and mash it in a bowl.
- Once the toast is ready, spread the mashed avocado on each slice.
- Add the cooked egg whites on top of the avocado.
- Finally, add your favorite toppings and enjoy!
