  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1 large egg
  • 1 tablespoon mayonnaise
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup radish, thinly sliced
  • Salt and pepper to taste
  • Optional: sprouts or lettuce for extra crunch

Instructions

  • Start by boiling water in a small saucepan. Once boiling, gently add the egg and cook for about 8-10 minutes for a hard-boiled egg.
  • While the egg is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and mix in salt and pepper.
  • Once the egg is cooked, remove it from boiling water and place it in cold water for a few minutes before peeling.
  • Slice the egg and mix it with mayonnaise (or Greek yogurt) in a bowl. Season with salt and pepper.
  • Toast the slices of bread until golden brown.
  • Spread the mashed avocado on one slice of bread. Top with cucumber and radish slices.
  • Layer the egg mixture on top of the veggies, and if you’re adding sprouts or lettuce, place them on now.
  • Top with the second slice of bread, slice in half, and enjoy your delicious sandwich!
