- 2 slices whole grain bread
- 1 ripe avocado
- 1 large egg
- 1 tablespoon mayonnaise
- 1/4 cup cucumber, thinly sliced
- 1/4 cup radish, thinly sliced
- Salt and pepper to taste
- Optional: sprouts or lettuce for extra crunch
Instructions
- Start by boiling water in a small saucepan. Once boiling, gently add the egg and cook for about 8-10 minutes for a hard-boiled egg.
- While the egg is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and mix in salt and pepper.
- Once the egg is cooked, remove it from boiling water and place it in cold water for a few minutes before peeling.
- Slice the egg and mix it with mayonnaise (or Greek yogurt) in a bowl. Season with salt and pepper.
- Toast the slices of bread until golden brown.
- Spread the mashed avocado on one slice of bread. Top with cucumber and radish slices.
- Layer the egg mixture on top of the veggies, and if you’re adding sprouts or lettuce, place them on now.
- Top with the second slice of bread, slice in half, and enjoy your delicious sandwich!
