- 2 ripe avocados (diced)
- 1 cup fresh or frozen corn kernels
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- 1 jalapeño (seeded and diced)
- 1 lime (juice)
- Salt and pepper (to taste)
Instructions
- In a medium bowl, combine the diced avocados and lime juice first to prevent browning.
- Add in the corn, red onion, cilantro, and jalapeño. Gently mix everything together.
- Season with salt and pepper to taste. You can always adjust the seasoning later.
- Let the salsa sit for 5 minutes to allow the flavors to meld.
- Give it a final stir and serve immediately.
