Gather these simple ingredients to make your Autumn Harvest Chicken Skillet:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup butternut squash, diced
  • 1 cup Brussels sprouts, halved
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chicken broth
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat and season chicken with salt and pepper. Add chicken to skillet.
  2. Cook chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
  3. Add butternut squash, Brussels sprouts, and red onion to the skillet and sauté for 5 minutes.
  4. Stir in garlic, thyme, and rosemary; cook for 1 minute.
  5. Return chicken to skillet, add chicken broth, cranberries, and walnuts. Cover and simmer for 10 minutes.
  6. Serve warm, garnished with extra herbs if desired.
