Gather these simple ingredients to make your Autumn Harvest Chicken Skillet:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup butternut squash, diced
- 1 cup Brussels sprouts, halved
- 1 red onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup chicken broth
- 1/4 cup dried cranberries
- 1/4 cup walnuts, chopped
Instructions
- Heat olive oil in a skillet over medium heat and season chicken with salt and pepper. Add chicken to skillet.
- Cook chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
- Add butternut squash, Brussels sprouts, and red onion to the skillet and sauté for 5 minutes.
- Stir in garlic, thyme, and rosemary; cook for 1 minute.
- Return chicken to skillet, add chicken broth, cranberries, and walnuts. Cover and simmer for 10 minutes.
- Serve warm, garnished with extra herbs if desired.
