  • 4 fillets salmon (skin removed)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh asparagus (trimmed)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • to taste Salt and pepper
  • for garnish Fresh parsley

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix the ricotta cheese, Parmesan cheese, lemon zest, salt, and pepper.
  • Take each salmon fillet and place about 2 tablespoons of the ricotta mixture along the center.
  • Lay 2-3 asparagus spears on top of the ricotta mixture.
  • Roll the salmon tightly from one end to the other, securing with toothpicks if needed.
  • In a skillet, heat olive oil over medium heat. Sear each salmon roll for about 2-3 minutes on each side until golden brown.
  • Transfer the rolls to a baking dish and bake in the preheated oven for 12-15 minutes, or until salmon is cooked through.
  • Remove from the oven, let cool for a couple of minutes, and garnish with fresh parsley before serving.
