  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar (or maple syrup)
  • 2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 2 tablespoons melted butter (or coconut oil)
  • 2 medium apples (peeled and diced)
  • 1/2 cup raisins or nuts (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  • In a large bowl, combine the rolled oats, baking powder, cinnamon, salt, and brown sugar.
  • In another bowl, whisk together the milk, eggs, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until combined. Stir in the diced apples and raisins or nuts if using.
  • Spread the mixture evenly in the prepared baking dish.
  • Bake for 30-35 minutes, or until the top is golden and set. You’ll know it’s ready when you insert a knife, and it comes out clean.
