- 1 ½ cups cups graham cracker crumbs
- ½ cup cups unsalted butter (melted)
- 1 cup cups sugar (divided)
- 2 packages cream cheese ((8 oz each), softened)
- 2 large eggs
- 1 cup cups apple cider
- 1 teaspoon teaspoon cinnamon
- ½ teaspoon teaspoon nutmeg
- 1 teaspoon teaspoon vanilla extract
- pinch salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, combine the graham cracker crumbs and melted butter. Press this mixture firmly into the bottom of your prepared baking dish to create a crust.
- In another bowl, beat the softened cream cheese and ¾ cup of sugar until smooth and creamy. This usually takes about 2-3 minutes.
- Add the eggs, one at a time, mixing well after each addition. Then, mix in the apple cider, cinnamon, nutmeg, vanilla extract, and a pinch of salt until everything is well combined.
- Pour the cheesecake mixture over the crust in the baking dish. Use a spatula to spread it evenly.
- Bake in the preheated oven for about 30-35 minutes, or until the edges are set and the center is slightly jiggly. Remember, it will continue to firm up as it cools!
- Allow the bars to cool completely at room temperature, then refrigerate them for at least 2 hours before slicing. This chilling time allows the flavors to meld beautifully.
