Here’s what you’ll need to whip up this delightful Apple Chicken Chili:

  • 1 lb ground chicken
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium apples, peeled and diced (I love using Honeycrisp!)
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté diced onion until translucent, about 5 minutes. Add minced garlic and cook for 1 additional minute.
  2. Add ground chicken, breaking it apart, and brown completely for 5-7 minutes.
  3. Stir in diced apples, chili powder, cumin, salt, and pepper.
  4. Add diced tomatoes, rinsed kidney beans, and chicken broth, and bring to a simmer.
  5. Reduce heat to low and let simmer for 20 minutes, then adjust seasoning if needed and serve hot, garnished with cilantro if desired.

  • For a spicier kick, add more chili powder or some diced jalapeños.
