Here’s what you’ll need to whip up this delightful Apple Chicken Chili:
- 1 lb ground chicken
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium apples, peeled and diced (I love using Honeycrisp!)
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 cup chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat and sauté diced onion until translucent, about 5 minutes. Add minced garlic and cook for 1 additional minute.
- Add ground chicken, breaking it apart, and brown completely for 5-7 minutes.
- Stir in diced apples, chili powder, cumin, salt, and pepper.
- Add diced tomatoes, rinsed kidney beans, and chicken broth, and bring to a simmer.
- Reduce heat to low and let simmer for 20 minutes, then adjust seasoning if needed and serve hot, garnished with cilantro if desired.
Notes
- For a spicier kick, add more chili powder or some diced jalapeños.
- This chili can be stored in the fridge for up to 3 days.
