- 4 boneless, skinless chicken breasts
- 1 cup of brie cheese, chopped
- 1 large apple, diced (Granny Smith works great!)
- 1/4 cup of walnuts, chopped (optional)
- 2 tablespoons of fresh rosemary, chopped
- Salt and pepper, to taste
- 2 tablespoons of olive oil
- 1/2 cup of chicken broth
- 1 tablespoon of honey (for a touch of sweetness)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine brie cheese, diced apple, walnuts, and rosemary; season with salt and pepper.
- Cut a pocket into each chicken breast and stuff with the apple and brie filling.
- Heat olive oil in an oven-safe pan and sear the stuffed chicken breasts for 3-4 minutes on each side.
- Pour chicken broth into the pan, drizzle honey over the chicken, and bake for 25-30 minutes.
- Let the chicken rest for about 5 minutes before serving.

- For added flavor, let the chicken marinate with seasonings for a few hours before cooking.
