To whip up these delightful Almond Banket Bars, you will need the following ingredients:
- 1 package (17.25 ounces) frozen puff pastry, thawed
- 1 cup almond paste
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
- Sliced almonds, for topping
- Powdered sugar, for dusting (optional)
Instructions
- Preheat oven to 400°F (200°C) and roll out puff pastry; cut into two 12×6 inch rectangles.
- Mix almond paste, granulated sugar, softened butter, and vanilla in a bowl until smooth.
- Spread half of the almond filling on one pastry rectangle, leaving an inch on each side; place the second rectangle on top.
- Seal edges with a fork to prevent leaking.
- Brush with beaten egg and sprinkle sliced almonds on top.
- Bake on a parchment-lined sheet for 25 minutes or until golden brown.
- Cool, dust with powdered sugar if desired, then cut and serve.

- Make sure the puff pastry is fully thawed before rolling it out.
