Ingredients

  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (or almond flour for a gluten-free option)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 eggs
  • Cooking spray or olive oil

Instructions

  1. Wash and slice zucchinis into half-inch rounds.
  2. Beat eggs in one bowl; mix breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper in another.
  3. Dip zucchini slices in egg, then coat with breadcrumb mixture.
  4. Preheat air fryer to 400°F (200°C) for 5 minutes.
  5. Arrange zucchini slices in a single layer in the air fryer basket, spray with oil.
  6. Cook for 12-15 minutes, flipping halfway, until golden brown and crispy.
