Ingredients

  • 4 large bell peppers (any color you prefer)
  • 1 cup cooked rice (or quinoa for a healthier option)
  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste

Instructions

  1. Slice the tops off the bell peppers and remove the seeds.
  2. Cook the ground meat in a skillet over medium heat, seasoning with salt, pepper, cumin, and chili powder.
  3. Combine the cooked meat with rice, black beans, corn, and salsa in a bowl.
  4. Spoon the mixture into each bell pepper.
  5. Preheat the air fryer to 375°F (190°C) and cook the peppers for 15-20 minutes, adding cheese halfway through.
