Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup heavy cream or coconut cream
  • 1 cup grated Parmesan cheese

  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Spiralize or slice zucchinis into noodles.
  2. Cook seasoned chicken in olive oil for 6-7 minutes on each side; let rest.
  3. Sauté garlic in the same skillet, add cream, and simmer. Stir in Parmesan until smooth.
  4. Add zucchini noodles to the sauce, toss for 2-3 minutes until tender. Slice chicken and place on top.
  5. Garnish with parsley and serve immediately.
