- 2 medium zucchinis
- 1 pound boneless, skinless chicken breasts
- 1 cup heavy cream or coconut cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Spiralize or slice zucchinis into noodles.
- Cook seasoned chicken in olive oil for 6-7 minutes on each side; let rest.
- Sauté garlic in the same skillet, add cream, and simmer. Stir in Parmesan until smooth.
- Add zucchini noodles to the sauce, toss for 2-3 minutes until tender. Slice chicken and place on top.
- Garnish with parsley and serve immediately.
Notes
- For a lighter option, you can use coconut cream instead of heavy cream.
