- 1 cup grated zucchini (about 1 medium zucchini)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar (or brown sugar for a richer flavor)
- ½ cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup chopped nuts (optional)
- ½ cup chocolate chips (optional)
Instructions
- Grate the zucchini and squeeze out excess moisture.
- Mix dry ingredients in a bowl.
- Whisk wet ingredients in another bowl and fold in the zucchini.
- Combine wet and dry mixtures until just mixed.
- Fold in optional nuts and chocolate chips.
- Fill muffin tins 2/3 full with batter.
- Bake in a preheated oven for 20-25 minutes.
- Cool muffins in the tin for 5 minutes before transferring to a wire rack.
Notes
- For a richer flavor, use brown sugar instead of granulated sugar.
- Feel free to adjust the spices or add dried fruits for variation.
