Delicious and moist zucchini muffins, perfect for breakfast or a snack.

Ingredients

  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar (or brown sugar for a richer flavor)
  • ½ cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup chopped nuts (optional)
  • ½ cup chocolate chips (optional)

Instructions

  1. Grate the zucchini and squeeze out excess moisture.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients in another bowl and fold in the zucchini.
  4. Combine wet and dry mixtures until just mixed.
  5. Fold in optional nuts and chocolate chips.
  6. Fill muffin tins 2/3 full with batter.
  7. Bake in a preheated oven for 20-25 minutes.
  8. Cool muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar.
  • Feel free to adjust the spices or add dried fruits for variation.
