Ingredients

  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar or a sugar substitute
  • ½ cup unsweetened cocoa powder
  • ½ cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chocolate chips (optional, but why not?)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. Sift together flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
  4. Whisk sugar, oil, eggs, and vanilla extract in another bowl until well combined.
  5. Stir in the grated zucchini.
  6. Gradually fold the dry ingredients into the wet mixture without overmixing.
  7. Fold in chocolate chips if desired.
  8. Pour the batter into the prepared pan and bake for 30-35 minutes.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
