- 1 ½ cups grated zucchini (about 1 medium zucchini)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar or a sugar substitute
- ½ cup unsweetened cocoa powder
- ½ cup vegetable oil or melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup chocolate chips (optional, but why not?)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- Sift together flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
- Whisk sugar, oil, eggs, and vanilla extract in another bowl until well combined.
- Stir in the grated zucchini.
- Gradually fold the dry ingredients into the wet mixture without overmixing.
- Fold in chocolate chips if desired.
- Pour the batter into the prepared pan and bake for 30-35 minutes.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
Notes
- For best results, use fresh zucchini.
- Feel free to substitute the sugar with a sugar alternative for a healthier option.
