Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a bowl, whisk together eggs, olive oil, and milk.
  4. In another bowl, mix flour, baking powder, garlic powder, salt, and black pepper.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in zucchini and shredded cheese; add herbs if desired.
  7. Transfer the batter into a greased loaf pan and smooth the top.
  8. Bake for 45 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
