Instructions
- Preheat your oven to 350°F (175°C).
- Grate the zucchini and squeeze out excess moisture.
- In a bowl, whisk together eggs, olive oil, and milk.
- In another bowl, mix flour, baking powder, garlic powder, salt, and black pepper.
- Fold the dry ingredients into the wet mixture until just combined.
- Gently fold in zucchini and shredded cheese; add herbs if desired.
- Transfer the batter into a greased loaf pan and smooth the top.
- Bake for 45 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
