- 2 boneless, skinless chicken breasts
- 1 can (15 oz) white beans (like cannellini or great northern)
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Add onion, garlic, white beans, corn, and green chilies.
- Sprinkle with cumin, chili powder, oregano, salt, and pepper.
- Pour chicken broth over the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken and return it to the pot.
- Stir in heavy cream or half-and-half before serving.

- Can be garnished with fresh cilantro for extra flavor.
