A creamy and flavorful white chicken chili made easily in a crockpot.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can (15 oz) white beans (like cannellini or great northern)
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add onion, garlic, white beans, corn, and green chilies.
  3. Sprinkle with cumin, chili powder, oregano, salt, and pepper.
  4. Pour chicken broth over the mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken and return it to the pot.
  7. Stir in heavy cream or half-and-half before serving.

  • Can be garnished with fresh cilantro for extra flavor.
