- 1 pound ground beef (or turkey for a lighter option)
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup salsa (your choice of spice level)
- 2 cups tortilla chips, crushed
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- Chopped green onions, for garnish
Instructions
- Brown the ground beef in a skillet over medium heat for 5-7 minutes.
- Stir in taco seasoning and a splash of water; cook for 2-3 minutes.
- Add black beans, corn, and salsa; combine and cook on low for 5 minutes.
- Preheat oven to 350°F (175°C) and layer half of the tortilla chips in a greased baking dish.
- Pour meat mixture over chips and layer half of the cheese on top.
- Repeat with remaining chips, meat mixture, and cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden; serve with sour cream and green onions.
